  • Ho’i’o Fern (Fiddle Head Fern)
  • Hawaiian Salt
  • Water
  • Ice Water Bath (lots of ice)

Step 1

Prep the Fern – Cut Ho’i’o Fern into 1 ½-inch pieces, discarding the tough ends.

Step 2

Wash Thoroughly – Rinse the fern in a large bowl of water, scrubbing as you would when washing rice. Repeat until the water runs clear.

Step 3

Boil & Blanch – In a large stainless steel pot, bring salted water to a rolling boil (water should taste like the ocean). Cook the ferns for 1 minute, stirring gently.

Step 4

Ice Bath – Immediately transfer the fern to an ice water bath to stop cooking and lock in its vibrant green color.

Step 5

Drain & Enjoy – Once cooled, drain the fern thoroughly.
